For tonight’s dinner, we had what one of my sons calls “the best tacos ever”. He seriously loves this recipe and they are so easy to make, with just a few ingredients. My friend, Jen, told me the recipe during a baseball practice and it was so simple that I committed it to memory and have made it a half dozen times since. Here it is:
Ingredients:
2 large (or 3 small) chicken breasts (mine were frozen, straight from the freezer)
1 can tomatoes (I used fire roasted today)
1 package taco seasoning
Directions:
Dump everything in your crockpot and cook on low for 8-10 hours. Before serving, shred the chicken and add a scoop (approximately a half cup, but I never measure) of sour cream and mix it all together. Serve on flour tortillas with toppings of your choice. We like cilantro, avocado, and chipotle tabasco. The kids just like a little bit of cheddar cheese.
Delicious! And nothing goes better with chicken tacos than chips and salsa so I whipped up a batch of this yummy stuff. Oh my, it was delicious. I am a lover of the chipotle chile (you probably guessed this based on my obsession with chipotle tabasco – it makes everything taste better!). I’ll probably never make a non-chipotle salsa ever again.
Here’s the recipe for Chipotle Salsa:
1 can (14 oz) Fire Roasted Tomatoes
1 cup fresh cherry tomatoes, sliced in half
1/2 cup white onion, chopped
2 cloves garlic, chopped
1 whole jalapeno, chopped
2 chipotle peppers in adobo, plus 1 tsp of the adobo sauce
1 tsp salt
1 tsp pepper
1/2 cup cilantro
1 lime, juiced
There you have it! Our easy and delicious dinner! We served everything with a side of fresh blueberries. And then took everyone to McDonalds for ice cream, as a reward for our boys for not hitting each other all weekend. That was $3.76 well spent…
